marfar chicken...
3 lbs chicken(we used tenderloins)
1 1/2 cups flour
2 tbs soy sauce
pinch salt
2 tbs baking powder
1 1/2 cup milk
2 eggs
oil for frying
mix salt, flour, and baking powder and sift together
mix soy sauce, milk and eggs together
add a little of the flour mixture to the egg mixture
cut chicken into strips
turn the fryer on to 365 f till ready... thoroughly cover each chicken slice with the flour mixture, then with the egg mixture, and put in fryer till golden brown... take them out, and check one chicken from each 'batch' to make sure its cooked
this was a HIT with all 5 kids, and the 3 adults!!! we had some peper sauce with it, and a vegie mix(steamed).... we will do this again.... we might even try my 'puree cauliflower' trick, but, well see...lol...

mac and cheese with cauliflower
got the idea from deceptively deliciouse(but doubled and changed a little to taste)
large back macaroni
olive oil
2 table spoon all-purpose flour
1 cup nonfat milk
1 cup cauliflower puree
4 cups shredded cheese
8 oz cream cheese
salt
paprika
boil the macaronie(note, any noodles can work) and drain when cooked
in another pan, use cooking spray, med heat, add oil, flour, cook, stirring constantly, but dont let it get brown.. add the milk, then cheese, keep stirring, and the puree, creamcheese, and the seasonings you want....
then mix it all....
this was ok, but not loved... next, we will try it with sweet potato puree.... however, the left overs made a nice other meal, ill post that next, lol...

chicken nuggets... with broccoli and cauliflower
2 1/2 cup bread crumbs(we used italian yum...)
3 bablespoon parmesan
1 teaspoon paprika
1 teaspoon garlic powder
2 cups broccolie
2 cups cauliflower(both pureed)
4 eggs
boneless chicken tenders
salt
olive oil
in a bowl, mix bread crumbs, parmesan, paprica and garlic powder....
in another bowl, mix the pureed broccoli and cauliflower, and the eggs
lay out the chicken, salt
in a skillet, heat the olive oil
take the chicken, dip in the wet mixture, then the dry, then the wet again, then the dry, put in the skillet... repeat for rest of chicken...
really is better then it sounds, and gets the kids vegies....
caleb, the one who does not like vegies, aidan two peices.... aidan, the one whos picky about meat, also ait two..... i had one, and it was yummy.....

rosemary roased chicken with potatoes
2 tsp paprika
1 1/2 tsp crushed rosemary leaves
1 tsp minced garlic
1/2 tsp pepper
2 tbsp olive oil
1 tsp salt
6 skinless chicken(cut into strips)
1 1/2 lbs potatoes (cut into cubes)
mix paprika, rosemary, garlic, peper, oil and salt.... add chicken and potatoes... put into caseral dish
put in preheated oven at 425 for 45 mins or till done, turning chicken and potatoes occasionally...
we did not like this recipee.... i will not add it to my recipee book... none of the kids liked it either... not our cup of tea i guess, lol....

2 cups oil for frying, or as needed
mix garlic powder, pepper, salt, paprika, bread crumbs and flour in a shallow bowl...
in another shallow dish, mix milk and eggs
put oil in skillet(i used electric skillet at 350)
dip the chicken in egg mix, then flour mix, then egg again, then flour... put in skillet repeat for each chicken...
this was yummy, and did not take too long to make... it was a hit with the kids also(all 5)... this will go into my recipee book
